Crock-pot Pulled Pork

Pulled pork, finishedI have been making this delicious pulled pork recipe for the last 5 years.  It has just the right amount of heat and a full flavorful bite that makes it a instant hit at any BBQ.  Just recently I have started smoking the pork shoulder in a smoker.  That alone has taken this recipe to a whole new level.

I hope you are able to try this dish at least once.  I hope to keep making as long as I can!

Shrimp & Coconut Milk Soup

Shrimp & Coconut Milk ingredientsI love soup! I could eat it for breakfast, lunch and dinner.  Maybe its because I live in the Northwest where its rainy all the time.  Or maybe it’s because of my Vietnamese heritage.  In Vietnam, they do eat soup for breakfast!  A good bowl of soup warms my tummy and brightens my day.

I came across this recipe in an American version and I decided to replace some ingredients for more of an asian taste.

Spicy and sour soup are one of my favorites.  You can add more or less sour or spicy according to your tastes.

Chicken Enchiladas

Enchilada ingredientsEveryone in our family agree; these are the best enchiladas we have ever eaten.  Period.  Even though this dish takes a long time to prepare, we think it is well worth the work.

A couple years ago, I entered this dish in Top Chef themed contest at my previous job and won 1st place over homemade apple pie!  I had actually voted for the pie too!

We got the original recipe from Gerry’s Chicken Enchiladas on AllRecipes.com. We ended up changing a couple things but this recipe stands out on it’s own.

This recipe has quickly shot up to our top 10 favorites. So give this recipe a try and tell us what you think.

Chicken and Dumplings ingredientsSometimes I just want comfort food without a whole lot of preparation. Looking for some good crock-pot recipes, I came across this bland chicken and dumplings recipe in a seemingly horrible crock-pot recipe book.  How ironic that this recipe is not cooked a crock-pot. However, I added some extra TLC and ingredients and found it to be the only gem in the book.

Dutch Apple Pancake

Dutch Apple Pancake ingredientsGrowing up I remember visiting a certain pancake house in southern California. Every time we would visit this pancake house I would always see these huge puffy pancakes being delivered to tables. The pancake was littered with sweet smelling apples and gooey toppings. This is what I had to have, and this dish was a wonderful treat for me every time we went.

But I had never attempted to make this on my own. It just so happened that I stumbled across this wonderful breakfast treat by accident. While visiting, my sister in law and her husband made something for us and resembled a breakfast pancake explosion. They called it the Big Wild pancake. After getting our hands on the recipe, we tried it out a couple times. And then it doned on me that this recipe would be awesome with apples baked into it. Trying out a couple techniques, I came up with this recipe.

Madeleine Recipe

Madeleines are small spongy cakes that have French origins. They have a distinctive shell shape from baking in special pans made just for these lovelies. I wish I had a great story about how I discovered these in France. But with dismay, it was nothing even close to that. My wife Kim brought me one of these from a local Starbucks. Needless to say, it was so delicious I just had to find out how to make these. That is where my adventure begins.

One thing I found out pretty fast was that I needed a Madeleine pan. You can find a handful of these types of pans on Amazon. We were able to find madeleine pans at our local Bed Bath & Beyond.

Taco Salad Recipe

This dish is more taco than salad. If I were to describe this dish, I would call it a taco casserole. My mother made this awesome dish for us growing up. At our house I make this dish at least once every couple months because everyone absolutely loves this cheesy comfort food. The next day everyone is sure to fight over the left overs.
